Matty, your shrimp is Macrobrachium sp., a fresh-water palaemonid shrimp, the most common and wide-spread species in NSW is Macrobrachium australiense, and it looks much like it (I have an unpublished key to the Macrobrachium species of OZ by John Short), I would need to see the claws and the rostrum in lateral view to confirm it as M. australiense
