I got a DS51 and thinking of useing it over water from time to time, also have the single ikelite sync cord.

Possible to get a adapter of some kind, from ikelite 5pin TO hotshoe ?

Or, safe to make one on my own if i get a ikelite connector and a hotshow connector.

Probably not,
as the hot shoe inside the housing passes usually/mostly trough Ikelite TTL-Controller.
You can trigger the strobe shortening the 2 pins, but the strobe will fire a full dump (or the other 5 power settings)
and you need to use your camera most likely manually.
You could get the pin layout of the strobe and the hot shoe of your camera, buy 2 cables and connect them manually
to trigger the strobe without the housing.

There is also this warning in the manual about above water use.

• Do not continuously fire the strobe more than 15 times above water in rapid
succession. If this does happen, allow the strobe to cool down for at least 10
