Maybe you should also consider a Go-Pro, some models are in that price range. It has no zoom, just a fixed-focus wide angle lens, but that makes it good for underwater landscapes and larger animals (may apply especially to the Galapagos). I have been very impressed by the video quality and it can also take photos up to 12Mpix depending on the model. I haven't taken any photos with it but you can find a lot of examples by googling: gopro underwater photos

Get her a GoPro with an LCD back, and a pole arm. While it's seriously wide-angle, she'll have a lot of fun with it. With the pole, if you get to snorkle with sea lions, or the swimming iguanas, it'll be a blast.
