I am trying to figure out the best way to have the copyright info displayed on the lower part of my photos. I have Photoshop CS but can't figure out how to do this in Photoshop. Or is it an embedded file in the photo? Any help would be appreciated.

Just add text to your photo, wherever you want, and then save it...

Or, you can use a program like BreezeBrowser, which has options for watermarking images.

I use the freeware copyrightleft to batch stamp my photos before putting them on the web. There's probably a way to do this in photoshop, but this is really simple.
